Cold Melon Soup with Basil

Serves: 6-8
- 1 Large Charentais melon or cantaloupe, ripe and perfectly sweet
- 1 tablespoon Lime juice
- 6 leaves Fresh basil, plus extra for garnish
- 1-2 Tablespoons Water, as required
- 1-2 Tablespoons Extra-Virgin Olive Oil
- To Taste Freshly Ground Pepper
- Cut the melon in half
- Remove the seeds and peel
- Cutting into rough chunks and place in a glass blender
- Add in the lime juice, basil leaves and olive oil
- Blitz in the blender until smooth
- Pour into shot glasses and chill until ready to serve
- Crack over some pepper and a small basil leaf to garnish just before serving.
